This delicious vegetarian dish can be made quickly by cooking the lentils and brown rice the night before!

  • 1 tsp. olive oil
  • 1 C. frozen chopped onion
  • 1/2 C. frozen chopped green bell pepper
  • 4 oz. firm tofu, pressed and cut into into 1-inch cubes
  • 1/2 C. cooked lentils
  • 1/2 C. cooked brown rice
  • 1 Tbs. reduced-sodium soy sauce
  • juice of 1/2 fresh lime

In a heavy-bottomed skillet, heat oil over medium-high heat. Add onion and bell pepper. Cook, stirring, until onion is lightly browned, about 5 minutes. Add tofu and continue to stir-fry for another 2 minutes, until tofu is lightly browned. Add remaining ingredients and cook, stirring gently, for another 2 to 3 minutes, until lentils and rice are heated through.
