  • 1 16-oz. pkg. dry lentils
  • 1 16-oz. can diced tomatoes, drained
  • 2 14-oz. cans beef broth
  • 3 C. water
  • 1 can chopped tomatoes
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 lb. Polish kielbasa sausage, cut in 1/2-inch pieces

Rinse and drain lentils, but do not soak. In a slow cooker, stir together the lentils, tomatoes, broth, water, carrot, celery, and sausage. Cover and cook in crockpot on High for 3 hours, or Low for 6-7 hours. Stir well before serving.

  • The above lentil and sausage stew recipe has one can of diced tomatoes, drained and one can of chopped tomatoes ?drained or undrained? Do you use both? the recipe sounds really good and I would like to try it. Can you please correct it for me. Thanks
