Lentils and Sausage
Ingredients
- 1 16-oz. pkg. dry lentils
- 1 16-oz. can diced tomatoes, drained
- 2 14-oz. cans beef broth
- 3 C. water
- 1 can chopped tomatoes
- 1 carrot, chopped
- 1 stalk celery, chopped
- 2 lb. Polish kielbasa sausage, cut in 1/2-inch pieces
Directions
Rinse and drain lentils, but do not soak. In a slow cooker, stir together the lentils, tomatoes, broth, water, carrot, celery, and sausage. Cover and cook in crockpot on High for 3 hours, or Low for 6-7 hours. Stir well before serving.
