  • 2 broiler/fryer chickens (2 to 3 pounds each), cut up or 16 pieces of chicken
  • 3-1/2 teaspoons salt, divided
  • 2 to 3 tablespoons lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/8 teaspoon pepper
  • Oil for deep-fat frying
  • 2 tablespoons hot water

Gently place your chickens in medium to large bowl. Next, pour your salt and lemon juice. Then, add in enough water to cover the chicken.

Cover and refrigerate your chicken overnight and let it really marinade (if you don't have that kind of time, or you want only a very subtle lemon flavor, a couple of hours will do).

Once you’re ready to cook, drain your chicken thoroughly.

In an airtight, resealable plastic bag, combine your paprika, flour, pepper and garlic salt.

Now, add your chicken to the bag, seal it, and toss to coat.

Finally, prep a large skillet and heat ½ of your oil to 375°. Add chicken; brown on all sides, about 20 minutes. Reduce heat. Carefully add water; cover and cook for 20 minutes or until juices run clear. Uncover; cook 10 minutes longer or until chicken is crisp.
