Ingredients

  • one 6-oz. can whole pitted black olives, drained and chopped or sliced
  • one 16-oz. can fat-free refried beans
  • 1 C. reduced-fat cheddar cheese, shredded
  • 3 plum tomatoes, seeded and diced
  • 1 C. reduced-fat sour cream
  • 2 Tbs. reduced-fat mayonnaise
  • 3 avocados
  • 1 tsp. lemon juice
  • one 1.25-oz. packet reduced-sodium taco seasoning mix

Directions

In a bowl, mix together sour cream, mayonnaise, and taco seasoning.  In a separate bowl, mash avocados and mix in lemon juice.  Spread refried beans on the bottom of a bowl or serving platter.  Top with avocado mixture, then sour cream mixture.  Next, lay on cheese, then tomatoes, then olives.  Chill for 2 or more hours, then serve.
