  • 1 cup milk
  • 3 egg yolks
  • 2 C. comte cheese, shredded
  • 1 tsp thyme, chopped
  • 6 egg whites

Preheat oven to 350°F and prepare a soufflé dish by coating it with butter. Puree 2 cups of the corn with milk in the blender. Pour into a bowl and add remaining corn. Season with salt. Add yolks, cheese, and thyme. In a large mixing bowl, beat egg whites until stiff peaks form. Fold the whites into the corn in 2 increments. Spoon mixture into baking dish. Bake for 50 minutes or until center jiggles slightly.
