  • 4 zucchinis, chopped
  • 1 yellow squash, chopped
  • 1 red onion, sliced
  • 1 C. snow peas
  • Salt and pepper to taste
  • 1/2 C. soy sauce
  • 2 tbsp lemon zest
  • 1 package Asian wheat noodles, cooked
  • 1/2 C. water

After cleaning and chopping all the vegetables place then in a crockpot and with 1/2 C. water and lemon zest. Heat on medium high for 20 mintues or until the veggies are tender.  Place your noodles in a bowl and dish veggies on top.  Drizzle soy sauce on top and enjoy.
