  • 2 T. flour
  • 2 T. butter
  • 12 oz. sour cream
  • 1 tsp. Italian seasoning
  • 1 T. Parmesan cheese
  • 7 oz. pipe rigate pasta
  • 2 red bell peppers, chopped
  • 1 zucchini, chopped
  • 2 heads broccoli, chopped

Cook the pasta according to the package directions. Melt the butter in a small sauce pan over medium heat, then add in the flour and stir. Add the sour cream, and stir until it begins to bubble. Reduce the heat and simmer for a few minutes, then add a pinch of pepper, Italian seasoning, and cheese. In a large bowl, combine the cooked pasta, vegetables, and sour cream mixture. Pour the pasta mixture into a baking dish and top with more cheese. Cover and bake for 20 minutes at 350 degrees. After 20 minutes, remove the cover and bake for 10 more minutes, or until the cheese is melted.
