Light and Easy Baked Cod with Olive Oil
Serving Size / Yield
- 4 cod fish fillets
- 1 1/2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 garlic cloves, crushed
- 1/2 teaspoon thyme
- salt & pepper, to taste
- Paprika (optional)
Preheat oven to 400 degrees. Place fillets in shallow baking dish drizzle lemon juice over each fillet.
In a small bowl, mix together olive oil, crushed garlic, thyme, and salt & pepper. Brush oil mix onto each fillet and bake for 15 to 20 minutes, or until flesh is completely opaque and juicy. Use additional salt, pepper or even paprika for extra flavor.
