Made with a package of frozen phyllo dough, this is a unique and delicious alternative to your usual pot pie. The crust is super light and crisp, filled with a rich and cheesy chicken and artichoke filling!

  • 2 lbs. Artichoke hearts
  • 2 C. chopped green onions
  • 3 eggs
  • 12 sheets phyllo dough
  • 1/4 C. olive oil
  • 1 C. feta cheese
  • 1 cooked chicken breast, shredded

In a large bowl, mix together the artichokes, green onions, eggs, chicken, and season with salt and pepper. Lightly grease the bottom of a baking pan with olive oil, and begin to layer the phyllo dough, brushing each layer with oil until you have 6 layers, pour the artichoke mixture into the pan, then continue to top with the rest of the phyllo, topping with a final layer of olive oil. Bake at 350 degrees for 40 minutes.
