  • 4 medium Beurre bosc pears
  • 5 oz. mixed greens
  • 4 tbsp. black olives, chopped
  • 1/2 cup cherry tomatoes
  • 1/4 cup beets, 1/8 inch slices
  • 1/3 cup olive oil
  • 3 tbsp. apple cider vinegar
  • 1 tbsp. raspberry preserves
  • Salt and pepper to taste

Preheat the grill to 350 degrees. Grill pear halves to a golden brown for 1-2 minute with the grill covered. Put aside on a plate and in a large salad bowl, toss together greens, beets, and olives. In a medium bowl, combine olive oil, apple cider vinegar, raspberry preserves, and salt and pepper to taste. Serve greens in each bowl and top with cherry tomatoes pear halves. Drizzle desired salad dressing and enjoy.
