  • 4 chicken breasts, sliced lengthwise
  • ¾ C. whole wheat breadcrumbs
  • 2 Tbs. olive oil
  • ¾ C. reduced fat mozzarella
  • ¼ C. parmesan cheese
  • 1 C. marinara
  • Whole wheat spaghetti, cooked

Preheat the oven to 450 degrees. Pat the chicken dry and brush it with olive oil. In a small bowl, combine the Parmesan cheese and breadcrumbs; dip the chicken into the breadcrumb mixture and line the pieces on a baking sheet. Bake the chicken for 25 minutes, until it’s cooked all the way through. Pour the marinara and mozzarella over the chicken and place it back in the oven for 5-7 minutes. Top the pasta with the chicken and serve!
