Broccoli and cheddar are two ingredients that mesh well in a wide variety of recipes, especially quick and easy dinner casseroles. Mix these two with carrots, a little bit of cheddar, onion and more for a light yet filling dinner dish.

  • 2 10 oz. pkg. frozen chopped broccoli, thawed
  • 2 eggs
  • 1 onion, chopped
  • 1 C. carrots, shredded
  • 1 (10 3/4 oz.) can cream of celery soup
  • 1 1/2 C. shredded light cheddar cheese

Combine all ingredients, except cheese in a large mixing bowl; pour into a buttered 2-quart baking dish. Sprinkle shredded cheese over top to melt. Bake at 350 degrees F for 30 minutes or until bubbly.
