  • 3 chicken breasts
  • Vegetable oil
  • 1 pkg frozen snapped peas
  • 1 pkg frozen broccoli florets
  • 1 can pitted tart cherries, drained, 1/2 cup juice reserved
  • 1/4 C brown sugar
  • 1/4 C granulated sugar
  • 1 tsp yellow mustard

On a stove top grill your chicken breasts until golden brown. While your chicken is grilling begin making the cherry glaze.  In a small saucepan combine the cherry juice and both sugars an bring to a boil over medium heat.  Then stir in the mustard and let simmer for another five minutes or until the sauce thickens slightly.  Once the sauce reaches the desired consistency add the cherries.  Let the sauce simmer for another 5 minutes or so.  Next steam the broccoli and snapped peas either on the stove or in the microwave.  Place the steamed broccoli and snapped peas on a plate and place the golden brown chicken on top of the veggies.  Lastly, pour the cherry glaze on top and enjoy.
