  • 2 medium potatoes, cubed
  • 3 carrots, peeled and chopped
  • 1 sweet potato, sliced or cubed
  • 2 golden beets, cubed
  • 3 stalks of celery, chopped
  • 1 small onion, chopped
  • 6 garlic cloves, minced
  • 4 cups vegetable broth - chicken or beef broth can be substituted
  • 1 can diced tomatoes
  • 1 cup broccoli
  • 2 tablespoons sugar
  • salt and pepper to taste

Combine everything into a crockpot with the carrots and potatoes on bottom. Cook on low for 6-7 hours or on high for 5 hours. Potatoes should be done and the vegetables should be tender.
