Light Italian Penne

Ingredients
- 2 Tbs. olive oil
- 4 oz. sliced pancetta, 1/8-inch thick, chopped into bite-sized pieces
- salt
- 1 lb. spaghetti
- 1/2 C. grated romano cheese
- 1/2 tsp. pepper
Directions
In a large skillet, heat olive oil over medium heat. Add the pancetta, and cook, stirring, for 10 minutes until golden brown. Bring 4 qts. water to a boil in a large pot. Add 2 Tbs. salt, then the pasta. Stir well, then cook over high heat, until pasta is al dente. Drain the pasta. Pour the pasta into the skillet and toss it with the cheese, pepper and a bit of water. Serve immediately.
