Unfortunately, for dieters, fruit crumble pastries are usually chalked full of calories and this could create issues for your diet. Substituting some of the ingredients for low calorie options will allow you to enjoy this lemon crumble without the guilt.

  • 1 pkg. Instant Lemon Pudding
  • 2 C. of skim milk
  • 4 egg yolks
  • 1 tsp. vanilla
  • 1 C. Splenda Sugar blend
  • 7/8 C. of rice flour
  • 8 Tbs. Margarine

Preheat the oven to 375 degrees. Combine the powdered sugar, flour, butter and vanilla until it becomes a loose dough. Then press dough into the bottom of a 9x13 inch pan. Bake for 15-20 mins. While the crust is in the oven, combine the milk and lemon instant pudding. Mix together for a few minutes and then add the yolks and vanilla. Mix well. Slowly add the powdered sugar and flour until everything is mixed together. When the crust is done, it should be a light brownish color, pour the filling on top and place back in the oven at 325 degrees for another 15-20 minutes. Once finished baking sprinkle with powdered sugar and let it cool to room temperature. Chill in the fridge for a cold bar, or serve at room temp.
