  • 4 C. chopped red potato
  • 1 C. chopped cucumber
  • 1 C. sliced cherry tomatos
  • 1 C. sliced green pepper
  • 1/2 C. sliced olives
  • 1 small onion diced
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • salt and pepper

Boil the potatoes until tender and slice into cubes. Add all vegetables together in a large bowl and gently mix together. In a small bowl whisk together the olive oil, vinegar, salt and pepper and lightly drizzle over top the salad.
