Ingredients

  • 1 1/2 C. oat bran
  • 1 1/2 C. flour
  • 1/3 C. brown sugar
  • 2 tsp. baking powder
  • 1 tsp. cream of tartar
  • 1/3 C. butter
  • 1 egg
  • 2 egg whites
  • 1/3 C. low fat plain yogurt
  • 1 tsp. vanilla
  • 1 C. raisins

Directions

Preheat oven to 400 degrees. Mix together oat bran, flour, brown sugar, baking powder and cream of tartar. Add butter. In small bowl, beat egg and egg whites. Mix in yogurt and vanilla. Add dry ingredients. Add raisins. Place dough in greased muffin tins. Bake for 20 to 25 minutes.
