  • 1 1/4 pounds red potatoes
  • 2 tbs extra virgin olive oil
  • 1 onion (chopped)
  • 1 carrot (chopped)
  • 2 tomatoes (chopped)
  • 1 tsp chili powder
  • 1/2 pound lean ground beef
  • 1/2 pound lean ground turkey
  • 1 1/2 cups frozen peas
  • 1/2 cup skim milk
  • 1/3 cup low fat cheddar cheese (shredded)

Place potatoes in microwave safe bowl with two tablespoons water. Heat one tablespoon olive oil in skillet over medium heat. Add carrot, onion, tomatoes, and chili powder. Cover, and cook until tender and transfer to two quart baking dish. Heat the rest of oil in a skillet over medium heat. Add turkey and beef. Cook until brown. Stir in peas and 1/4 cup water. Let simmer two minutes. Spread over vegetables in baking dish. Preheat broiler. Add milk to potatoes and mash. Mix in cheese. Spread over meat and broil one to two minutes.
