  • 1 box white cake mix (2 layer)
  • 1 C. crushed strawberries
  • 1 (3 oz.) pkg. sugar free strawberry Jell-O
  • 1/2 C. vegetable oil
  • 4 eggs, at room temperature
  • Glaze (optional):
  • 1/4 C. butter, softened
  • 3 1/2 C. confectioners' sugar
  • 1/4 C. crushed strawberries

Combine cake mix, 1 C. strawberries, Jell-O, vegetable oil and eggs in a large bowl and beat with electric mixer for 3 minutes. Pour into a greased and floured tube or bundt pan. Bake in a 350 degree oven for 45-55 minutes, or until cake tests done. Cool in the pan on a wire rack for 10 minutes, then remove to a serving plate. Combine glaze ingredients and spread over cake.
