  • 2 cup rhubarb, sliced into bite size pieces
  • 2 pints fresh strawberries, hulled and sliced
  • 1 cup sugar
  • 2 tbs cornstarch
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp all spice
  • 1 pie crust

Heat oven to 350 degrees. Wash and rinse the strawberries then add the cornstarch and sugar, mix well.  Check for tartness if too tart you may want to add a little more sugar. Add the cinnamon and allspice. Stir in the rhubarb. Prick the pie crust bottom a few times with a fork. Add the strawberry and rhubarb mixture. Cover with the top crust and cut slits in the top crust in order for the steam to escape. Crimp to seal pie crusts together.Bake for fifty minutes. Allow to cool for two hours then serve.
