  • ½ lb. penne pasta
  • 2 Tbs. tomato paste
  • 2 oz. cream cheese
  • ¼ C. Parmesan cheese
  • 2 tsp. garlic, minced
  • 1 C. chicken, diced
  • 1 red bell pepper, chopped
  • ½ C. broccoli, chopped

Cook the pasta according to the package’s instructions. In a saucepan, bring ½ cup of water to a boil and add the tomato paste. Reduce the heat once everything is dissolved. Add in the cream cheese, and stir. Add in the Parmesan. Heat a skillet on medium-high and season the chicken with salt and pepper. Add in some olive oil and saute the chicken until it’s nearly cooked through. Add the garlic, broccoli, and pepper. Toss the veggies, chicken, sauce, and penne together. Top with additional Parmesan.
