  • ½ C. Earth Balance Vegan Buttery Stick
  • 4 Large Onions, thinly sliced
  • 1 C. Mushrooms, thinly sliced
  • 1 tsp. Garlic, minced
  • 2 C. Reduced-Fat Shredded Swiss Cheese
  • 1 10.75 oz. can 98% Fat-Free Condensed Cream of Chicken Soup
  • 2/3 C. Skim Milk
  • 1 Tbs. Soy Sauce
  • 8 1/2" thick Baguette slices, buttered with Earth Balance Vegan Buttery Stick
  • 1/4 C. Reduced Fat Parmesan-Style Cheese, grated

Preheat oven to 400 degrees. Grease an 8x8" baking dish with cooking spray. In a large skillet, melt buttery stick over medium heat. Add onions to skillet and sauté for 5 minutes. Add mushrooms and garlic, and continue to cook for 10 more minutes. Layer onion mixture in dish, alternating with layers from sprinklings of 1 1/2 cups shredded Swiss cheese. In a saucepan, heat soup, milk and soy sauce until simmering. Pour over onion mixture. Top onion mixture with buttered bread, and top bread layer with remaining Swiss cheese and parmesan. Cover and bake for 20 minutes. Reduce heat to 375 degrees, and continue baking for 10 minutes.
