Lightened Up Chocolate-Covered Caramel Nut Clusters

- 2 C. sugar-free chocolate chips
- 4 Tbs. coconut milk
- 8 oz. sugar-free caramel candies
- 2 Tbs. coconut milk
- 1 tsp. vanilla
- 2 C. salted pecans, chopped roughly
- 1/2 C. chocolate chips (semisweet)
- 2 tsp. vegetable shortening
Line a baking sheet with parchment. Spray liberally with cooking spray. Set aside.
In a saucepan over medium heat, combine the caramel and 2 Tbs. coconut milk. Stir constantly until caramel melts, and remove from flame. Fold vanilla and pecans into the caramel using a rubber spatula.
Spray an ice cream scoop and scoop small balls of the mix onto the greased cookie sheet. Spray your fingertips with cooking spray and press down gently so they form discs.
In a microwave safe bowl, melt the chocolate and the 4 Tbs. of coconut milk. Stir evey 10 seconds until the mixture is smooth.
Surbmerge the pecan caramel discs in chocolate sauce. Place back onto the cookie sheet and chill for at least an hour.
