Lighter Than Air Cupcakes

- 3/4 C. sugar
- 1/2 C. cake flour
- 1/3 tsp. salt
- 6 egg whites, room temperature
- 2 1/2 Tbs. warm water
- 1/2 tsp. orange extract
- 3/4 C. cream of tartar
Preheat the oven to 350 degrees and place greased cupcake wrappers ino the tin. In a food processor, pulse the sugar until it's very fine.
In a large bowl, sift the sugar, flour, and salt. In a stand mixer, combine the egg whites, water, orange extract, and tartar for two minutes at medium speed. Add the remaining sugar slowly, until semi-firm peaks form. Sift a small amount of flour in and fold in gently. Continue the process until the flour has all been incorporated.
Equally divide the batter into the lined muffin tin and bake for approximately 20 minutes. Cool before frosting.
