Lime Bean Salad

Ingredients
- two 16-oz. cans black beans, rinsed and drained
- 1/2 tsp. dried thyme
- 1/4 tsp. fennel seed
- 2 garlic cloves, pressed
- 2/3 C. red onion, chopped
- 1/2 C. red bell pepper, chopped
- 2 Tbs. fresh Italian parsley, chopped
- 2 Tbs. fresh cilantro, chopped
- 2 green onions, chopped
- 1 Tbs. ground pepper
- 1/8 tsp. cayenne pepper
- 1/4 C. olive oil
- 1/2 C. fresh lime juice
- salt and pepper, to taste
- 5-6 ears of corn, blanched and kernels removed from cobs
Directions
Combine all ingredients. Mix gently until well blended. Chill. Prepare 1 day ahead. Will keep for 4-or 5 days in refrigerator.
