  • • 1 tbsp coconut extract
  • • 5 tbsp. lime juice
  • • 1 tbsp lime zest
  • • 1 pinch salt
  • • 1 1/4 C. unsweetened coconut flakes, optional
  • • 1/4 C. toasted coconut, optional
  • • 1 lime thinly sliced, optional

Whisk together the coconut milk, half-and-half, lime juice, lime zest, salt and sugar, stirring until the sugar is dissolved. Stir in the extract and coconut flakes. Chill in the freezer, stirring in 45-minute intervals until you achieve your preferred ice cream texture. Garnish with toasted coconut and lime slices.
