Lime Salad Mold

This lime salad recipe brings so many great memories growing up as a child. My grandmother would almost always make this at our family get togethers. It is light and refreshing.

  • 1 8-serving pkg. lime gelatin
  • 1 C. boiling water
  • 1 C. cold water
  • 1 3-oz. pkg. cream cheese, softened
  • 1 C. whipped topping
  • 1 C. chopped pecans
  • 1 C. mini marshmallows
  • 1 8-oz. can crushed pineapple, drained

Dissolve gelatin in boiling water, then stir in cold water. Beat cream cheese at medium speed. Gradually beat in gelatin. chill until consistency of an unbeaten egg white. Fold in whipped topping, pecans, marshmallows and crushed pineapple into mixture. Pour into a shallow, slightly oiled 6-cup mold. Cover and chill for 2-4 hours. Unmold onto a lettuce-lined plate for a pretty presentation.

  • Someone, forget who it was, always made this for our McDowell Family Reunion in Myrtle Beach, S.C........ haven't been since my parents died, so hope they are keeping up the tradition.
