Loaded Baked Potato Bites

- 1 lb small Yukon or Red Potatoes, sliced in half
- ¼ C Butter, melted
- 8oz Cheddar Cheese, shredded
- 8 Bacon slices, cooked and crumbled
- ½ C Green Onions, chopped for garnish
- Sour Cream, for garnish
Begin this recipe for loaded baked potato bites by preheating your oven to 400 degrees. Line a large baking sheet with foil and set aside while you prepare your potatoes.
Cut each potato in half and brush both sides with butter. Set on the baking sheet and let cook for 30 to 40 minutes or until lightly browned, turning the potatoes over halfway through.
Once the potatoes are tender, remove from the oven and begin layering your ingredients. Place a small amount of cheese on each potato followed by the crumbled bacon. Return to the oven to cook until the cheese has melted. Remove from the oven and top with a small dollop of sour cream and a sprinkle of green onions.
Serve warm or at room temperature as an appetizer or side dish.
