  • 4 large baking potatoes
  • 6 slices bacon
  • 2 tsp. butter
  • 1/2 C. Parsley
  • 1/4 C. sour cream
  • 1/2 tsp. salt
  • 1/4 C. cheddar cheese, shredded

Pierce the potatoes several times with a fork and wash. Put each potato in the microwave separately and cook on high heat for 5 minutes, or until soft. Wrap each potato in foil and let it sit for an additional 3 to 5 minutes. Fry the bacon strips. Cool the strips, then crumble. Once the potatoes are soft, halve them and scoop the flesh out into a bowl. Mix the flesh butter, sour cream, bacon crumbles, and salt. Fill the potato halves with this potato mixture. The potatoes should overflow a little. Put the potatoes on a microwave safe plate and sprinkle with cheese. Microwave for 30 second intervals until the cheese is melted. Garnish with chopped Parsley and serve.
