  • ½ stick butter
  • ¼ C. flour
  • 6 C. chicken broth
  • ½ C. sour cream
  • 4 oz. cream cheese, softened
  • 3 lb. potatoes, baked (skins removed)
  • 1 C. white cheddar cheese, shredded
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • ½ C. cheddar cheese, shredded

In a large pot, melt butter and whisk in flour until well-combined. Whisk in chicken broth, sour cream, and cream cheese. Add in baked potatoes and mash until desired consistency. Stir in white cheddar until melted. Season with salt and pepper, top with bacon and cheddar, and serve while hot!
