  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 tablespoons minced garlic
  • 2 jalapenos, finely diced
  • 6 cups chicken broth
  • ½ medium green pepper
  • 4 small boneless, skinless rotisserie chicken breasts, shredded
  • 2 cups frozen corn
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 2 14 ounce cans diced tomatoes
  • 2 limes, juiced
  • 1 cup roughly crushed tortilla chips

In a large saucepan, heat the vegetable oil.
Add the onions and cook until softened before adding the garlic, green pepper and jalapenos. Cook until onion is translucent and garlic is fragrant.
Pour the chicken broth, tomatoes and corn into the pot and bring to a boil.
Lower to a simmer and add the shredded chicken breasts, stirring together until combined.
Add cumin, chili powder and lime juice. Stir and let simmer for ten minutes.
When serving, add the tortilla chips and enjoy!
