  • 1 tablespoon extra virgin olive oil
  • 1 red bell pepper, diced
  • ½ pound of chuck beef, chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 400g can chickpeas, drained, rinsed
  • 400g can lentils, drained, rinsed
  • 3 cups Bolognese Sauce
  • 1/4 cup chopped fresh coriander, plus extra sprigs to serve

Heat oil in a large, deep frying pan over medium-high heat. Add beef and red pepper. Cook, stirring occasionally, for 35 minutes or until softened and beef tender.
Add cumin, coriander and paprika. Cook, stirring, for 1 minute or until fragrant. Add chickpeas, lentils, Bolognese sauce and 2/3 cup water. Cook, stirring occasionally, for 8 to 10 minutes or until heated through. Then, stir in the coriander and serve.
