This salad has pretty much everything in it - but feel free to add more! As the saying goes, the more the merrier! Toss in your freshest vegetables from the market or your own garden and enjoy a naturally delicious dish.

Ingredients

  • 2 C. iceberg lettuce, chopped
  • 1 red pepper, diced
  • 1 C. button mushrooms, sliced
  • 1 carrot, peeled and chopped
  • 3 radishes, diced
  • 1 C. cauliflower, chopped
  • 1 C. broccoli, chopped
  • 1 C. cherry tomatoes, halved
  • 1 avocado, peeled and diced
  • 1/4 C. cheese, diced small
  • 1 Tbs. fresh dill
  • 1 tsp. fresh rosemary
  • 1/2 tsp. garlic powder
  • 1 Tbs. lemon juice
  • 1 Tbs. olive oil
  • salt and pepper

Directions

In a large salad bowl, toss the vegetables, avocado and cheese
In a small bowl, mix the lemon juice with the rosemary, dill, and garlic powder
Whisk the mixture vigorously while pouring the olive oil slowly into the dressing
Season to taste with salt and pepper
Drizzle the dressing over the salad and toss to coat thoroughly
