Ingredients

  • 3-4 leftover meatloaf slices
  • ¼ cup ketchup
  • 2 tbsp brown sugar
  • 2 leaves of lettuce
  • 1/3 Red onion and tomato, sliced
  • 1 teaspoon of mayo
  • 3-4 Pickle slices
  • 1 tbsp. olive oil
  • 1 tbsp. garlic powder
  • 2 slices of provolone cheese

Directions

Preheat oven to 350F.
Meanwhile, cut the baguette in half lengthwise. Brush with olive oil, and season with garlic powder and salt. Place bread on a backing pan and toast for 5 minutes.
While the bread toasts, reheat leftover meatloaf slices in the microwave for 3 minutes.
For ketchup glaze, in a small bowl, stir together 1/4 cup of ketchup and 2 tablespoon of brown sugar. Set aside.
Then, remove bread from the oven and place meatloaf slices inside and pour ketchup glaze on top of the meat. Layer with cheese slices on meatloaf. Lastly, apply mayo to top layer of baguette and finish with other condiments to complete sandwich and serve.
