Lobster Meat Casserole

  • 1/3 C. butter or margarine
  • 1 clove garlic, minced
  • 2 lb. Maine lobster meat, cut into bite-sized pieces
  • 1/2 C. cracker crumb mixture
  • 3/4 C. Monterey Jack cheese, grated
  • 1 Tbs. butter

The lobster should be at room temperature before baking. Preheat over to 400 degrees. Heat 1/3 C. butter in a saucepan, stir in garlic and cook for about 1 minute, stirring constantly. Do not let butter or garlic brown. Place lobster in a buttered casserole and toss with melted butter. Sprinkle lobster first with cracker crumbs, and then with cheese. Dot with remaining butter. Bake for 12-15 minutes, or just until lobster is heated through and cheese is melted.
