Make your own lobster rolls on croissants right in your own home. This recipe is easy enough that you can whip it up for lunch in a very short period of time.   • 1 1/2 lb. fresh lobster meat
  • 1/2 C. mayonnaise
  • 1 Tbs. tarragon, minced
  • 2 Tbs. parsley, minced
  • 3 stalks celery, minced
  • 2 Tbs. lemon juice
  • 4 Tbs. butter
  • 4 croissants, cut in half
  • salt and pepper for taste

Chop the lobster finely and put into a bowl
Add the mayonnaise, lemon juice and stir
Mix the herbs into the lobster mixture
Season to taste with salt and pepper
Chill for 2 hours or up to 12 hours
Lightly toast the croissants and brush the cut sides with butter
This will help protect the bread from getting soggy when the croissants are filled Divide the lobster salad mixture between the rolls and close them
