Lokshen Pudding

Ingredients
- 1/2 lb. vermicelli
- 1/4 C. butter
- 1/3 C. almonds
- 1/3 C. golden raisins
- 1/3 C. candied peels
- 1/4 C. sugar
- pinch cinnamon
- 2 eggs
- 2/3 C. whipping cream
Directions
Boil the vermicelli in slightly salted water for a few minutes until cooked. Drain and add the butter. Meanwhile, blanch the almonds in boiling water, remove the skin and chop. Whip the cream and chill. Preheat the oven to 350 degrees. Add the golden raisins, candied peel and half of the almonds to the vermicelli. Mix the sugar with the cinnamon and stir in gently. Beat the eggs and stir in carefully. Turn into a buttered ovenproof dish, and sprinkle with the remainder of the almonds. Bake for 10-15 minutes until set and then brown under the broiler until crisp on top. Serve hot with the whipped cream.
