Lots of Chicken Soup

Ingredients
- 2 Tbs. olive oil
- 1 large onion, diced
- 4 carrots, chopped
- 4 stalks celery, chopped
- 1 whole stewing chicken
- 4 C. low salt low fat chicken broth
- 2 bay leaves
- 1 C. ditalini pasta
- Salt and pepper to taste
- Parmesan cheese (optional)
Directions
In large pot in hot olive oil, fry all vegetables together. Add chicken broth, whole chicken and bay leaves. Simmer for 1 hour. Remove meat from bones and place back in pot. Add ditalini and cook until tender. Add salt and pepper to taste. When ready to serve, add as much parmesan cheese that you like.
