Lou's Light Mashed Potatoes
Ingredients
- 1 bag potatoes
- 2 lg. cans Swanson 99% fat free chicken broth
- light butter
- light sour cream
- pepper
Directions
Peel and wash potatoes. In large pot, pour in 1 whole can of chicken broth. Cut potatoes into chunks and put into pot with broth. Bring to boil and cook until very soft. Drain broth into separate bowl. Pour broth back into potatoes as you mash them. Do not let them get too loose. Add half stick light butter, mash. Add light sour cream as you mash. Sprinkle pepper to taste and mash.
