  • 1 lb. of dried red beans, rinsed
  • 1 lb. of smoked sausage, sliced
  • 1 bay leaf
  • 2 tablespoons of Cajun seasoning
  • ½ garlic clove, chopped
  • ½ onion, chopped
  • 1 stalk celery, chopped
  • ½ green bell pepper, chopped
  • 1 teaspoon of salt
  • 1 teaspoon of dried parsley
  • ¼ teaspoon of ground cumin
  • 5 cups of cold water
  • Rice:
  • 2 cups of instant white rice
  • 2 cups of water
  • 1 tablespoon of unsalted butter
  • 1 pinch of salt

Place the red beans, smoked sausage bay leaf, Cajun seasoning, garlic, onion, celery, green pepper, salt parsley and cumin in the instant pot. Slowly pour the 5 cups of water to cover all of the ingredients. Be sure not to over line the inside of the pot. Give it a good stir.
Cover the instant pot and bring it to full pressure over high heat for 10 minutes. Reduce the heat to low and maintain full pressure and cook for 30 minutes. Be sure to allow the pressure to drop naturally and occasionally stir. Remove the cover and give it another good stir.
Heat the rice and 2 cups of water in a microwave safe-bowl on high for 6 minutes. Add butter and a pinch of salt to the rice and cover before microwaving the rice. Let the rice stand for 5 minutes or until the water is absorbed. Fluff with a fork.
