Low Calorie Orange Marmalade Thumbprint Cookies
Serving Size / Yield
- 1 cup butter
- 1/2 cup Splenda
- 2 eggs, room temperature and separated
- 1 tsp vanilla extract
- Pinch of salt
- 2 cups flour
- 3/4 cup sugar free orange marmalade or whatever you prefer
Use a mixer to blend together room temperature butter and sweetener on high for 3 minutes.
Mix in egg yolks and vanilla extract to the mixture.
Now, add in salt and flour and continue mixing.
Once everything is well combined, place the dough in the fridge for 30 minutes.
Preheat the oven to 350 degrees.
Start making 1 inch balls with the dough.
Place them on a parchment lined cookie sheet.
Press into the center of the dough with your thumb and fill with 1/2 tsp of marmalade.
Bake for 15 minutes or until done.
