Ingredients
- 8 fillet raw cod
- 2 Tbs. lemon juice
- 2 tsp. garlic
- 2 Tbs. olive oil
- 1 C. onions, chopped
- 1 C. celery, chopped
- 1 6-oz. can tomato paste
- 1 tsp. chicken bouillon
- 2 bay leaves
- 1 tsp. seasoning salt
- 1/2 C. tomatoes
- 1 C. coconut milk
- 1 8-oz. can tomato sauce
Directions
Sprinkle the fish with lemon juice. Seed the tomato and cut into strips. Prepare the celery, onion and fresh tomato. Heat the olive oil in a heavy pan and add the celery, onion and tomato. Cook for about 10 minutes. Add the coconut milk, chicken bouillon and the rest of the ingredients. Stir in the tomato paste and tomato sauce. Add the fish and cook until flaky and firm. Remove fish to a plate. Boil the sauce until thickened and pour over the fish. Serve over your choice of brown rice.
