Zucchini is a great low carb alternative for any of your favorite pasta dishes. By using a spiralizer, you can make this fabulous green squash into a healthy meal without sacrificing flavor.

  • 4 zucchini, spiralized
  • 1 T. olive oil
  • 2 garlic cloves, finely minced
  • 2 C. tomatoes, chopped
  • 2 T. capers
  • ¼ C. sliced black olives
  • 1 tsp. dried oregano
  • ¼ tsp. red pepper flakes
  • 1 T. fresh lemon juice
  • salt
  • pepper
  • ⅓ C. thinly sliced basil leaves.
  • ½ C. feta

Spiralize the zucchini and place in a large bowl.
Heat oil in a large skillet over medium-high heat.
Add the tomatoes and garlic, stirring for 5 minutes until tomatoes have softened.
Add capers, olives, oregano, red pepper flakes, and lemon juice and cook another 5 minutes.
Season to taste with salt and pepper.
Toss the sauce with the zucchini strands and stir in the feta and basil.
Serve immediately.
