This low-carb spinach dip is a healthy alternative to the regular fattening dips that are served at restaurants. This recipe is dairy-free, low-fat and tastes great. It is a wonderful snack to whip up for ay occasion. It is also a fun food to use to get the kids to eat veggies. A simple, healthy snack that is ready in 20 minutes!

  • 1 can of artichoke hearts (chopped)
  • 1 1/2 cups of Parmesan cheese (grated)
  • 1/2 package of spinach (chopped)
  • 1 tbs of Dijon mustard
  • 2 cups of steamed cauliflower
  • 1/2 tsp garlic powders
  • Salt and pepper to taste

Preheat oven at 400 degress. In a food proessor or blender, blen the cauliflower, salt, pepper, garlic powder, mustard and Parmesan together until smooth. Add spinach and artichokes, and combine well. Pour mixture into a large enough baking dish and heat in a preheated oven for ten minutes. Serve the dip with veggies of your choice and pita bread.
