Low Carb Stuffed Green Peppers

This is a wonderful way to enjoy stuffed peppers. This dish is made super-tasty with brown rice, garlic powder and mozzarella cheese!

Ingredients

  • 4 sweet green peppers
  • 16 oz. ground turkey, raw
  • 1 15-oz. can tomato sauce
  • 1 C. cooked brown rice
  • 1/4 C. onions
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/2 C. cheese, part-skim mozzarella

Cut a thin slice from the end of the peppers to remove the seeds and membranes, then rinse. Put the peppers in a glass dish and microwave until hot. Brown the ground turkey and drain. Add the remaining ingredients to the turkey and cook until warm. Spoon the hamburger mixture into the peppers and stand them in an 8x8 pan.


Cover with foil and bake at 350 degrees for 45 minutes. Uncover and add the mozzarella cheese. Bake for until 15 minutes and then let sit for 5 minutes. Serve.
