Low Country Chicken Pilaf
Ingredients
- 3 Tbs. olive or vegetable oil
- 3-4 boneless skinless chicken breasts
- 2 onions, chopped
- 2 C. fat free, low sodium chicken broth
- 1 lb. smoked sausage, coarsely chopped
- 1/2 green bell pepper, coarsely chopped
- 1/2 red pepper, coarsely chopped
- 1 rib celery, diced
- 2 C. long-grain rice
- 2 Tbs. Cajun seasoning or red pepper flakes if you have no Cajun
- 1 tsp. thyme
- 1/2 tsp. salt, or to taste
- 1/4 tsp. freshly ground pepper, or to taste
- 1 can whole tomatoes or 1 C. fresh, peeled and chopped
- 2 Tbs. minced parsley
Directions
Heat 2 Tbs. of the oil in a pot, add the sausage, peppers, celery and onion. Sauté until onion is opaque. Cook rice according to directions on package, add to pot. Add thyme, Cajun seasoning, salt and pepper. Parboil chicken breasts for 20 minutes, season with extra Cajun spice if you like it hot, cut up and add to pot. Add tomatoes and 2 C. chicken broth and simmer for 45 minutes. Sprinkle with parsley and serve. Tastes even better the second day.
