A great tasting low fat meal that is quick and easy. My family requests it often,

  • 1 1/2 lb. ground chicken breast
  • 1/2 red bell pepper, sliced and chopped into small pieces
  • 1 med. onion chopped
  • 1 box stuffing mix
  • salt and pepper to taste
  • 1 Tbs. parsley flakes
  • 1 tsp. garlic powder
  • 2 eggs
  • 1 C. favorite barbecue sauce

Preheat oven to 400 degrees. Mix all ingredients together. Add barbecue sauce last. Form mixture into small loaves on baking sheet. Bake approximately 30 mins then check center of loaf. If it's no longer pink then it's ready to serve. I use a baking stone for this recipe.
