Low Fat Warm Spiced Zucchini Bread
Ingredients
- 1 C. whole wheat flour
- 1 C. white flour
- 2 tsp. baking powder
- 3 tsp. cinnamon
- 2 tsp. nutmeg
- 2 Tbs. canola oil
- 1 C. container lowfat plain or vanilla yogurt
- 1 egg and 1 egg white
- 1 C. brown sugar
- 2 C. grated zucchini
- 1 C. toasted walnuts, place in skillet and heated; stirred for 4-5 minutes
Directions
In a large bowl, stir the first 5 ingredients together and make a well. In another small bowl, blend oil, yogurt, eggs and sugar. Add the wet mixture to the dry and stir in 2 C. zucchini and walnuts. Stir just until blended. If the batter is stirred too much, tunnels will form in the muffins. Bake at 350 for 50-60 minutes or until a toothpick inserted comes out clean.
