  • 3 Large Eggs
  • 1 C. Whole Milk
  • 1 Tbs. Vegetable Oil
  • 1/3 C. All-Purpose Flour
  • 1/2 C. Granulated Sugar
  • 1/4 C. Honey
  • 1 1/2 tsp. Pure Vanilla Extract
  • 1 tsp. Cinnamon
  • 1/2 tsp. Sea Salt
  • 2 C. Blueberries
  • 1 9" Pie Shell

Use a blender to mix together the eggs, milk, vegetable oil, flour, sugar, honey, vanilla, cinnamon, and salt for about 30 seconds until smooth. Let the batter rest for about 20 minutes. Meanwhile, line the bottom of the pie crust with blueberries. Pour the custard mixture over the berries. Bake pie for 35-40 minutes until a knife inserted into the center of the pie comes out clean. Let cool on a rack before serving.
